In the Autumn and Winter I do make alot of soups. There’s something very warming and comforting about them. They also help me ensure that my children are getting a good range of vegetables and I can hide things in soups that they perhaps might not normally be so keen on eating. Generally they freeze well too so I try to make double and freeze half, that way I’ve always got a pretty instant and healthy meal in the freezer that I can whip out when time is tight.
